We've got a hotel already booked - Stonefield Estate in Soufriere - and love doing local stuff compared to the more touristy things

I totally agree with hiring a local taxi to show you around. Be sure that you negotiate a good price! Some places to visit are...

Pigeon Point (outside beach) The Park is more touristy. On the outside you get to mingle and enjoy local food with the locals.
According to the time of year you're going there may be other activities going on. For a more local feel, we celebrate our Creole Festival in October, strickly local....I'm St. Lucian, i would know...;)

Ask your hotel sek to hook you up with a local taxi driver, hire him for the day (and seriously negotiate your way down in price) and ask him to bring you to the non-touristy places. I always ask for the local markets... never a miss (ps. I live in the Caribbean myself!).
